hello! i'm new here, but i have a question.... should be simple for you guys :)
i'm going hog hunting for my first time in 3 weeks. i was wondering if anyone could either shoot me a link to a site describing how to butcher a hog, or describe it for me. i do all my own venison processing, and have a grinder and such, but i don't usually cut too much up for steaks. i need to know where to get the cuts for pork roasts, and chops, etc.

also, can i expect this pork to taste remotely the same to pork you buy in a store? or is it more gamey?
any specials tricks to cooking or preparing it? usually, i butcher everything and it gets vacuum sealed immediately.

Just remember if it's a boar it's sausage, if it's a sow cut it up. Some will differ with my opinion but the dozen or so wild pigs that I've killed and eaten that's worked for me.......unless you smoke the meat then even a 6 year old boar from Tejon can taste great.
