A question was asked about a butcher in Lompoc: Bruce's Meats. Phone number 805 736 MEAT. He does a good job. One note: if there is hair or "stuff" on your carcass, it's gonna be on your cuts or in your burger or sausage. That's what butchers do. They don't want a hanging carcass, they want a skinned one, ready to process. Call ahead and provide ample time. I believe the cost is: $75 up to 100 lbs. then $.75/lb. after that.
