Today my wife cooked up some of the ground elk, with some "southwest seasoning" (tacos and burritos) and it was very good. With some rice and beans we had mexican nite at my house. I have some elk meat from the 08 cow hunt and already made some chili, that I took to the church potluck and was a gigantic hit at. As well as swiss stew with some round steaks which was so tender and very good.

Elk are exciting and fun to hunt and can be great eating. Nothing is better than cooking your elk which ever way you like the most, and remembering you times spent in the woods, chasing those illusive creatures. What kinds of dishes do you guys prepare with your elk? Do you prepare it differently if you shot a cow or bull? Recipies maybe?

Umm sounds good to me, (tacos and burritos). Never tried it that way before.

But me personally, I'm a fan of jerkies. I'm not a pro at it, but my pops was the best. I usually make stew and b-q over the grill, but most of all, I love to make a traditional asian dish which is called Larb. I know it sounds not so attracting, but it's one of best dish in cooking any type of wild game meat.

As for cow over bulls, I usually prepare them the same. Unless if it's a younger animal, it's all over the grill.

Gotta give that tacos and burritos a try though, hopefully this year.

Ground, steaks and this year we had a batch of summer sausage made up. Elk is some of the best eating on the planet. Makes you forget all that backbreaking work it took to get it off the mountain.

my bro and i both shot bulls. the meat was on the tougher side. i think the stuff with plenty of connective tissue will be great cooked slow and low, but the steaks seared, and heated until med rare was still tough.

personally, this i my favorite animal to chase. to watch one bugle through binos is a extra treat.

i would love a cow hunt. a freezer full of tender elk would be great!

Some southeast asian dish. I like elk laap. And for those who likes them rare like a steak, there's also a rare laap dish too.

DUDE!!!! i love thai food! we need to hunt togther. i was just in southeast asia, and i took lots of cooking classes. ELK LAAP (LARP?) is a great idea!

I bring along all the ingredients with me on deer or elk hunting trip. Laap and sai Khom (asian version of menudo) are the first two dishes I would make in camp with fresh venison if I or my group kill a deer or elk.

About hunting together, just let me know when and where.

Elk hamburger with chopped up jalapenos and Ranch dressing all mixed together is the only way to fly, topped with hot pepper cheese. Now that's a burger.

As expected younger cows and bulls are the best, but all are good. I like green chili meat, summer sausage, grilled back straps, roast, chili w/ beans, ground elk in spagetti sauce, steaks, stew, stir fry, jerky, Italian sausage, breakfast sausage (use that in the chili) etc....

I mix my deer burger with chopped jalapenos and shredded pepperjack cheese. MMMMMMMMMM Tastey!! It works good with elk too!! Making me hungry just thinkin about em.

It's what we live on:) That along with deer, pigs and gobblers..It's all great eating!
