Just got done cleaning up the dinner plates after some BBQ'd German Sausages made out of my 150# boar taken in Monterey County in May. Some coarse ground mustard....a good soft hoagie roll. It was delicious.

Trying to figure out when the weather's cool enough to slow cook my Soprano's Sunday Gravy with those Italian links all day.

what cuts do you use for the sausage. my partner took a 180# boar at fhl...want
to make some into sausage!! :gunfighter

Basically everything you aren't using for something else. I cut out the tenderloins and backstraps and have some hams made. I also always get a front shoulder roast or two then all of the remaining scraps go to sausage.

I'm to the point now where I want 100% in breakfast, Italian or German sausage. In my experience, it's just too hit & miss on the chops and roast. I know the others will get eaten up quickly, so why take the chance?

My pig at the last ham slam came back from the butcher as two hams (both cut in half, bone-in), boneless chops, and ribs...The rest was half bulk breakfast sausage, and half bulk italian.

Just finished off the first pack of breakfast sausage this week, and used up a package of italian sausage in a big pot of pasta sauce the other night.

The problem wasn't FHL it was the lady who ran the check in window. Some of my best hunting trips have been to FHL. HAving to deal with a soup nazi to get checked in was what many of us didn't like. It appears that has changed for the better.
