Finally ate pigeon!

This 4th of July I finally ate adult pigeon. It is quite good and tastes somewhat like a cross between dove and quail. Pigeon has a deep rich dark color. The way my friend 's technique from Mitcogan , ( sp?) Mexico is to first chop of the wings, head and feet then pluck and clean the bird. Boil the pigeons for one hour with garlic and onions under low flame. The fry the birds just enough to get a crust. you can stuff the pigeons with bacon. then serve with green salsa and tomalitos. I covered mine with La Morena brand chiplote peppers yummy yummy!
