Does anyone know of a butcher that will process and cure hogs in the San Diego area?

Call Rod at Tip-Top Meats in Carlsbad. My understanding is that's the closest place. I heard a rumor there's another place in Oceanside but I tried Rod the first time and it came out fantastic so that's where I'm going from here on out. He's done 4 pigs for me now and I've been happy every time. I dropped off a whole pig (skinned of course) that weighed about 175 pounds and he only charged me $100 for Honey Smoked Hams, Smoked Chops and Breakfast Sausage out of the rest. Best Hundred Bucks I ever spent!!

There's a butcher in Ramona, San Marcos, and one in Oceanside.....besides the one in Carlsbad they all are in the yellow book. If your closer to mexico National City and Chula Vista have great Mexica style butchers. All of them do wildgame but most want you to call before stopping by with your kill.
Sorry I don't have their numbers but they all are in the book you just have to ask about wildgame.

I've always used SDHNTR's Backyard Custom Meat Processing, he's good but real expensive and drinks a lot of beer while on the job.

Other than that, T and H meats is in San Marcos. Bisher's is in Ramona and Mike's Choice Meats is in Oceanside.
