My friend and I both bagged hogs on our pig hunt in the sierra foothills last weekend and would like to get the hams smoked and cured. The butcher shop we go to does not do this. Does anyone know where I might take the hams to get this done? Thanks in advance

Dukemaster,
We have been using a butcher in Glen Avon off the 60 fwy east of the 15 fwy for a few years now. I think Superduty used them last year with good results. It has been a couple of years since we had any hams smoked but I believe they still do it. Good quality butchering and they will also vacuum seal your meat for an extra charge. The phone number to Phil's Meat Cutting is (909) 685-2615. Good shooting!

Congrats on the pigs!

What general area of the Sierra Foothill did you get your pigs? Did you hunt a ranch? If so, how did you like it?

Good luck with the smoking.

We were on a private ranch outside of Mariposa. I'll post up the details when I get the pics

Try Bree's Meats in in Garden Grove. I know they process wild game.

Thanks , I just dropped off some sausage meat there for them to grind and case. they don't smoke meat. Said something about all the AQMD regulations. I love going in that place. just bought some andouille sausage there for some red beans and rice.

You gotta love the good ol AQMD. I have to deal with them in my job and I know they have some strict rules, but not being able to smoke some pork?
