A friend of mine gave me a small, 80lb hog he shot. Its all cleaned and in the fridge. How long can I keep it in there before I decide whether to cut it up or cook it whole? Thanks.
I wouldn't go past 10 days. I would get that thing cut and wrapped (or cooked whole) between 6-10 days of killan it....Much like 410, I like to hang it for a few before processing it.
