I've found Alaska Game Bags to be the best. They're light weight, very durable and breathable, and last for many uses. Whats also nice about them is that they roll up tight so they don't take up much pack space. Then when you go to use it you just unroll it over the meat like a Jimmy.

Bruce, I really like that first knife you pictured. Regarding the one you have, do you find the serrations to help or hinder if you're boning out meat? We like to stop and sharpen a lot, so I don't know if that would be the way to go for us. That clean blade is sure pretty though.

My husband elk hunts, and uses those heavy duty bags you can get at Sportsman's Warehouse or Cabela's. They wash up nicely and come in several sizes. I use the deer bag sizes for hides a lot - I've got a bear hide that I'm working on in one right now. They are a little heavy to pack in though.

Thats the joy of cutco double-d blades, the way they're made, they won't need sharpening for years. I own several cutco serated kitchen knifes that have never been sharpened and I've had them for at least 8 years. They're pricey, but this a case of you get what you pay for.

My boning knife (5 1/2in) has deboned at least a dozen deer, an elk and one hog, and its never seen a stone.

Always sharp

The unique design of the DD edge actually prevents them from dulling and we have several in our kitchen that after a decade of use still cut like new. If I hadn't seen this for myself I would never believe it. Check out the elk hunter reviews at Drop Point Hunting Knife by CUTCO Cutlery
