Do any of you make jerky with you'r pigs?
If so is it any good and how do you do it?

I've heard nothing but negativity toward hog jerky, but since I'm cheap and don't want to take it to a butcher and get it processed I was wondering what you all do with you'r pigs.

This could be a good alternative when you shoot one of those big boars.

I have not had any luck with hog jerky, it just doesn't come out right or taste good. I also have some comercial "wild boar jerky" that was a gift this last Christmas and it isn't too good either and seems to have a lot "other ingrediants". Between my hunting buddy and I we have butchered several pigs ourselves but no big boars so we have not made any sausage yet. We do have a meat grinder that I have been waiting to try on a wild boar. I think most people grind up any meat that is too stinky to cook up whole but we have had nothing but great tasting pork from our wild pigs.
