Several years back we harvested a couple of bison on one of Ted Turners' ranches in Montana. Definitely a harvest in a pasture and the herd gathered around the nose bleeding animal until it fell down and the guys had to ease the truck in to winch it up and away. About 800# live that resulted in about 200# of meat that we were allowed to butcher and bone at the processors' barn. We wasted none of it. Terrific grass fed meat!
