The speer reloading manual has the ballistic chart in the back of the book. A 75 grn 243 bullet has a ballistic coefficient of about .23 for a flat based bullet. It will be a little more if you are using a boatail design. @ 3100 FPS a 200 yard 0 will put you 1.7" high at 100 yards. 8.3" low at 300 . 25.9" low at 400. 56.7" low at 500 yards.
A 300 yard 0 will put you 4.5" high at 100 yards, 5.6" high at 200 yards, 14.8" low at 400 yards and 42.8" low at 500 yards.
Those figures should at least get you in the ballpark.
