just wanted to say hi to ya all, and looking for as many tips to hunting pigs as i can get. I got a Lake Saoma Hunting pass and hope to go up their next weekend, also got permission to hunt on some land close to home in Carmel Valley at a winery I do plumbing work for every now and then.
Done a lot of reading up on tracking and stalking but theirs lots of different things I've read about cleaning after the kill, Should I do the hole deal by gutting and skinning out in the field? or should I leave the skin on till I get back home to keep the meat clean, then i read that you want to cool down the meat as soon as you can for the best tasting meet.
Any info be great,

The sooner you gut and skin the hog, the better the pork will taste. Keep that theory in mind.

Thanks, I'm going to go and scout the winery land tomorrow and see whats up their, they had pig last year but they fixed the fence but they got 200 some more acres then LOS PADRES dam.

Anyway, like L2H said, get the guts out and cool it down ASAP. That's really the key. Once you've got the meat good and cold, you can deal with as you would... but if you let it stay warm too long, you're dealing with stronger flavors at best, and rancid meat at worst. Of course, it's not instantaneous. Don't go thinking you have to get ice in the body cavity within 30 minutes or anything crazy like that... but the sooner the better. Pork is nothing like venison that can hang in the heat all day and still be fine.

Dress it out right away to let air into the body cavity to cool down and skin as soon as posible. Keepint the cavity clean while dragging. I alway keep a 5 gal jug of water to wash the cavity when I get it to the truck. But if its a good hike out D-bone and hang the meat as you go to cool down in side game bags that breathe well.
