Smoked salmon candy. 48 hours in a brown sugar, honey, maple syrup and salt brine. Then 48 hours drying time. Then 4 hours in the smoker. Yum.

That looks great.. I'd love to catch a salmon and do that. I am gonna try making smoked trout this year, now that trout season is starting

I guess that is how you made room in the freezer for some bear meat. I know with the 2 bucks and some salmon your freezer had to be filling up. If I send you my address how much will it cost me to purchase some salmon candy?? :)

Is it time for venison jerky?

I used to have all my salmon and steelhead done up that way at Katie's smokehouse in Trinidad California! You're right it is totally candy!
