What would be the size of the bulls eye on the target if I were going to sight in my rifle

How far are you shooting, and what power scope do you have?

As long as you can see the bullseye well for consistent target hold, you can shoot for a group, then adjust from there.

At 100 yards I like to use 1 inch orange targets which for my eyes give me good contrast. When shooting for groups I place the target so that it just touches the vertical and horizontal on the right upper side of the cross hairs. With a good solid bench rest I then shoot for my 3 shot groups and adjust the scope as necessary after the three shot groups.

I still to this day like the old Leupold site in targets with the black squares.
