I cooked a ham this weekend off the javelina Karen shot last weekend and let me say...it was very good! I was a bit leary after seeing all the posts about how good/bad the meat was but I used a recipe the guide told me about and mmmm-mmmm-good!
I knew someone would ask..hehehe.. Take the portion of javvie and but it in big pot with some onion, bell pepper, and whatever along that line you prefer. I used those two things and garlic. Then boil it all for 2 or 3 hours, until the meat is ready to fall off the bone, remove the bone, slice the meat into serving size pieces, fry lightly, just until it colors and eat. I was totally impressed with the flavor!
