Interesting, the deer which i get on my property have very thick layer of fat. Almost like pigs. I never saw anything like that on any other deer taken from other areas. And i saw quite a few.

If it is not a gut shot I first skin and then gut. Deer, bear and female pig i case-skin. Male pig i skin the usual way because of this stinky gland, so i skin all the belly first wide circle around it, and then start from hind legs down. I tried many techniques and found this one to be the cleanest one. I hate to have hair in my meat. You know how hard it is to remove hair from meat especially if it drys a little.
The case-skinning or maybe it has different name usually used in furbearer animal skinning when the whole skin stays intact. But it works great for me.
I learned it from my friend who used to hunt for life when he was younger.

That makes a lot of sense. I was taught to field dress by gutting first, but hair ends up getting into the stomach cavity and I feel like it wastes some of the meat around the belly. I will have to try your method. It sounds cleaner and simpler.

Yep, especially deer. You almost do not need to use the knife. Just push your fist between the body and skin and keep rolling it down and remember to keep hair inside the roll, Sometimes it is dificult to pull since it is slick, just cut a little hole for your left thumb, stick it in and pull down at the same time separating the skin from the meat. Then when all the skin arrived to the head, cut the neck and you will have a perfect bag for intestines if you do not keep the hide.

Yep, there is more than one way to skin a cat; as the saying goes. And, under certain conditions, one method may make more sense than another.
