Just curious for opinions on best boondocking battery array utilizing two 12V Deep Cycle type batteries.
Specifically, parallel or series wiring best for this situation?

There have alot of option but before i'll suggest you to check this source. Personally i use this Universal Power Group 12V 100Ah Solar. I purchased 4 of these for a small, rarely used solar kit. I am pleasantly surprised by their reliability and consistent power.

As batteries for campers, independent power sources of 12, 24, and 48 volts are effectively used. They are portable chargers with a good capacity battery, although 120Ah will be enough for you to recharge all your devices. I often use a handheld flashlight https://www.amazon.com/Vont-Flashlight-Flashlights-Water-Resistant-Accessories/dp/B089T8HDBV, and such a battery completely covers my needs. Such batteries are supplied in a moisture-proof design, equipped with a built-in protection board and a charger. Portable batteries allow you to power various energy consumers with a voltage of 12 V and in the presence of an inverter-converter – and equipment for 220 V.

I use LiFePo batteries. They are lighter to carry around, 26 lbs for 100 aH, compared to the older sealed lead acid or AGM batts. I have Chins but boondockers also like Battleborn LiFePo batts too. Battleborn are the cadillac of LiFePO batteries and cost almost 3x what a Chins does. $330 vs $875. The Battleborns are made in Reno NV if you want to stay US made.

Ive got one 100 aH batt wired to charge off my alternator for my truck cab fridge and cab electronics and one 200 aH in the bed under my shell that is charged up from 2 100w solar panels on the roof for boondocking.

I have off grid solar sytems and components for sale. 3.2 upto 10 kw hybrid inverters, Racking. Panels and wiring have lifepo4 batteries. 50 to 100 ah. In San Fernando Valley.

It depends on how far you want to go with it and how much you want to spend. I was using deep cell batteries that were mounted on the front of the trailer. I got tired of them getting stolen so I decided to go with Lithium and put them inside one of the bench seats. Then I kept adding. Now I have 4 100 Ah batteries and solar panels all tied into a charger/inverter.
