Arizona Javelina

After about a ten year drought I finally bagged another Javelina. A small sow but I'm sure it will taste good.

Congratulations!!! How do you cook Javies???? B-B-Q........does it taste like pork??? I heard from this 600 acre ranchowner in Texas that they castrate the male Javie and let it loose and it grows big and fat from the castration....then they kill and eat the big, fat Javie. However I forgot to ask him what it taste like.

Thanks Larry. The Javelina taste very good. I think it tastes better than venison. Since it's not really a pig it's meat is not "pork like". It tends to be more of a red meat. Give it a shot if you get a chance.
