For what it's worth the pro guides I hunted with used skinny little old fashioned non-locking pocket knives with about 3" blades, Shcrades or some such. They got a laugh out of some of the huge knives some folks bring along. Took 'em about one minute to gut them out, and about 15 minutes to skin and decapitate them without stopping to sharpen them once.

Check out one of the smaller Busse's...Like the Badger Attack or Active Duty..pricey but an absolutely bomb proof knife..no questions asked guarentee..and the only product I know where the maker actually encourages you to abuse them.
