I heard about a place in Gardena that will butcher wild game (at $ .69/lb) and also will cure and smoke wild boar hams (also smokes chops, bacon, you name it). So, I dropped off a couple of hog hind quarters last week and picked them up at the end of the week. They use a machine to inject the hams with curing salt and sugar, then smoke them for a day or two. The result was absolute unbelievable! Of course, the hams are a lot leaner (not from the curing/smoking process, but just cause they're wild hams) and a little drier than the store bought Farmer Johns, but just as tasty plus a side pallet taste of wild boar. Absolutely great!
The place; Eschabachs Butcher shop, on Western Ave., near 180th street, in Gardena. It's run by an old school German butcher. And here's the best part; they'll smoke a lot of stuff, whatever you have (it's a lot charge, basically), for the exorbarent price of 15 bucks!
So we can't wait until Christmas (we snuck a slice before the hams went into the freezer........mmmmmmmmmmmmmmmmmm). Anyway, I don't know if any of you guys live in the south bay or I'm the last one to know about this, so I just thought I'd pass this on as a good tip.
