Two things:

1. No substitute for experience, but you can teach yourself to field dress by watching a bunch of youtube videos. Really study them, and then try it yourself.
2. One of the best places to hunt pigs in TX, is Rob Kiebler or Fair Chase Ltd. Tell him your situation and he'll really help you. Tons of hogs and javelina, right along the Rio Grande - also best food and accomodations in TX. hunting ranches. I've never hunted pigs with him, but saw a ton of them while I was there hunting Javi's.

Agree 100% dirtpoor and wild1. Start new hunters with small game that is available even on public land. Very few people go after squirrels and rabbits for some reason. Start small then work your way up.

As far as pigs, with the price hikes, you might as well pay for a guided true wild pig hunt if you are willing to pony up 500+. I have seen pigs on public ground though not taken one, my brother has though. It can be done.

Also if you are worried about wasting meat, you can take a wild pig hunting advanced hunter ed class from the dfg and learn how to butcher hands on.

Does anyone have any recommendations on a guide service in Northern California? My Dad is turning 55 next month and I would like to surprise him with a guided pig hunt. I'm trying to keep the price range around $500.. I've tried to contact Acorn Ridge Outfitters and 1st Choice Outfitters, but so far I haven't heard back from anyone. Any recommendations? Thank you!
