So a couple of times I've been asked to bring back the ears from wild hogs the Admiral and I shot for friends who are serious cooks. No problem, we don't want the hairy things. Well, at the recent LA gourmet food fair those folks went to, what is on display, nothing other than terrine of pig's ear! They sent me this picture. OMG. I guess I don't know what we have been missing out on. So how many of you brave souls out there eat the ears? And if so, how do you cook them? The Admiral and I will continue to "pass".

Dry them out and give them to the dog to chew on... I'll pass as well... No thanks on the feet either...

I've never had wild pig ears but domestic pigs, I used to eat them all the time as a kid. I remember having the ears similar to the ones in your picture. They were pretty good eating from what I can remember. Very cartilagenous (if that's a word) and chewy or was it crunchy. LOL

I've heard thy're pretty good and served as a sort of appetizer.


Now, let me tell you about chicken feet...great with beer but not a lot of meat.

The plumbing is actually pretty good, I do a rinse/clean under running water, cut into 3-4" lengths, quick boil and then fry them. Season them as you like or stuff them before frying.... jalapenos ect. Warning, they stink during boiling.
