Tonight I had hog heart tacos from the two small pigs I shot last month, the first two hogs this ol’ guy ever shot. http://www.jesseshunting.com/forums/showthread.php/212495
I did not eat the hearts in the multicultural tradition of gaining the characteristics of the animal. I’m overweight, need a shave and my wife tells me my table manners are “lacking” so I’m mostly there already anyway. I felt out of respect I shouldn’t waste the hearts. I looked up some recipes on line, found a nice Estonian one for grilled strips of heart and tried it out while my wife was away. http://nami-nami.blogspot.com/2009/08/story-of-grilled-pigs-heart.html I put the marinated grilled strips of meat in tacos with some grilled onions, red pepper and garlic. It was quite nice. Will I have the “stomach” to eat the ears, snout and other off bits in the future? I doubt it but one never knows; could be “another step toward total enlightenment.” So how many of you regular hog whackers eat the heart? Does the heart of a huge boar like 410 took down have a very "strong" taste as does the meat?

The ears are deliciously crunch and the snout has great fatty meat on there. I wouldn't waste them.

You caught me a on bored day today.

1) Heart and kidneys goes on the BBQ with the ribs.
2) steam liver, mix bile with hotsauce for dipping.
3) stomach for menudo, asian style not mexican.
4) cut intestine into 2 ft long strips. Use a chopstick to turn them inside out. Wash with salt and water. Use them for sausage casing.
5) slice lung, tongue, and testicles to be stir fry with ginger, garlic, onions, jalapeno, and lemon grass.
6) steam brain stir with fish sauce, lime juice, and spices.

Anybody gag yet?..........Don't because once you taste them you will be coming back for more!

Brains? i cant eat it. pound for pound..there is nothing on the planet with more cholesterol.

the rest, i'll try. i had a pig head. it shocked me, because it was the first thing i saw when i opened my butcher's shipping box. i gave it to an old lady that roasted it and shredded it for tacos!! i missed out, but i heard it was delicious.

pigs in general are yummy.

I've had 1-5 and don't mind it, but haven't tried 6. I used to eat the brains when I was a child, but not so much anymore.

Ah, thanks for this...my wife is Filipina, and I was wondering if I could entice her with some Filipino recipes to help me chow down on Wild Boar. She thought my Wild Pork and Beans was ok, but I gobbled it, as did my stepson, who's half Pinoy. I will look for a recipe for Adobo and Caldereta.

And if you are in my area shake hands with the best adobo and caldereta cook in town....

Don't forget there is also a pork papaitan dish. Well maybe not in pinoy cooking but heck it's popular all over southeast asia.

I am quite serious about this as I've just shot two more pigs and kept the hearts and the liver now. I'm planning on making pate from the liver - I'm not a fan of cooked liver at the best of times. I'll put up a separate post about the hunt with pictures as mf410 asked for pics. I'm passing on the brain, not worried about vCJD - just don't like to see all the gyri and sulci - too damn anatomical looking for my "taste".
