Tonight I had hog heart tacos from the two small pigs I shot last month, the first two hogs this ol’ guy ever shot. http://www.jesseshunting.com/forums/showthread.php/212495
I did not eat the hearts in the multicultural tradition of gaining the characteristics of the animal. I’m overweight, need a shave and my wife tells me my table manners are “lacking” so I’m mostly there already anyway. I felt out of respect I shouldn’t waste the hearts. I looked up some recipes on line, found a nice Estonian one for grilled strips of heart and tried it out while my wife was away. http://nami-nami.blogspot.com/2009/08/story-of-grilled-pigs-heart.html I put the marinated grilled strips of meat in tacos with some grilled onions, red pepper and garlic. It was quite nice. Will I have the “stomach” to eat the ears, snout and other off bits in the future? I doubt it but one never knows; could be “another step toward total enlightenment.” So how many of you regular hog whackers eat the heart? Does the heart of a huge boar like 410 took down have a very "strong" taste as does the meat?
