We almost always wipe down out deer with a towel soaked in plain white vinegar. Keeps flies and meat bees off.

bigtusker does what I have ALWAYS done, WHITE VINEGAR. Although, I've heard of the black pepper trick as well.

Blow flies aside, in hot weather you can smell soured pork. If you are worried about it, get your nose into the thicker spots and smell it. If it smells like it is souring, cut it out "before" you pack it out. Costco has 150qt Igloo ice chests usually for 59 bucks. I keep one or two of these in the truck with ice in them(in two liter bottles). A dressed out, 200lb hog will fit in them barely but you have to cut the hams off and lay them in on top after a couple of two liter bottles are put into the carcass. Calif. is a hot son of a gun at times.

How far is too far. Depending on your shape and how hard you want ot work. I posted a story of a deer that we got in d-14 on the weekend the fires were just strating to rage and I hiked in about 5-6 miles straight in. Got a deer at 8:30 and then lifted it on my back and carried the whole thing out, no boning or quartering. I admit I am in great shap and stong enough to do this but it can be done even if you go way in take your time, have plenty of water and get help. Took a couple hours, it was hot in the 80-90's and the meat is just fine, I eat it every other night. It all depends on you and how hard you want to work. But yes try to get it to the butcher or a cooler right away.

Actually, we've tried both white vinegar and peppar mixed in. Seems to work.

but it is the quickest way to get it out if you can do it
