Lately its been Vermin Pigs and old smelly Boars but what about Javilinas ?
So far Its been 50/50 eatable to pork of the Gods.
I my self have never hunted or Tasted Javilina, looks like a 90lbs or so Pig?
in all other forums 90 to 100 pounds is a perfect eating pig, not to Old and grisseled.
So lets cross the Boarder to AZ and do our do deligents on Havilinas !
Great ! Good ! Not so or Gag me with a Javilina ?

The meat eater podcast did a thing on javelina tamales the mex way. Sounded good.
I have seen them in the wild on a rez in AZ. A big one is 40 lbs and they are actually rodents I believe.

They taste fine and are actually pretty mild flavored. Like so many things field care is critical! They have a musk gland on their back side and they help one-another spread this through their coats. So it is of the highest importance that you make your cuts from the inside out and peel the hide back carefully during the skinning process so that the hair does not come in contact with the meat. After gutting, hang the "pig" and have one hunter handle the hide and one handle the meat and knife so that the the meat doesn't become "contaminated with the musk gland secretions.

Like qd said a big javelina would go 40#s and they are more closely related to rodents, though they are not rodents, than pigs.
