I talked to Chris at Bobby Lee's to see what happened to my ribs. Hopefully, there is a box in their freezer that they forgot to give me (Told them twice that I wanted the ribs and it's on the paperwork).

However, I have a sneaking suspicion, that the ribs may have become sausage and that is the reason I have so damn much of it...

Looks like BBQ this weekend...

Butchering your own is the only way to go. I took 45lbs of meat to the butcher and had it ground into sausage. He charged me $20. Took the hams in to have them cured and smoked. Cost me .50cents per pound. I turned everything else into roasts and boneless steaks at home and sealed them up with my Foodsaver.

Use to take my game to Wolfsens Meat Locker in Gustine, $70 flat charge for any cuts and sasauge flavored, (no links), but they don't do wild gam eanymore. Been looking for another processor. Will look into Hilmar Meats, Wmidbrook, is that in Hilmar off 165?

I thought in the back of a Porsche is the engine and if you put a pig there it'll be fully cooked by the time you get home. Could be a cheaper way to cure a ham...

Just got my pig from Bobby Lees yesterday
the hanging weight on their scale was 76 pounds
got back 2 smoked hams and loin and shoulder chops and ribs
no sausage when I opened the box
don't know why because I asked for some when dropping it off
total price was $96.38
but I am still wondering where the sausage went?

Yeah, that's Hilmar right off of 165. It's on the same side of as the other super market on 165 and just north of it....not the new Nob Hill foods.


They do a good job.

Here's what I've paid before:

* No processing fee
* $.60/lb to cut & wrap
* $1/lb to smoke
* $1.25/lb for sausage

wow thats a lot of money.just to let you all know that there is two places in napa that smokes sausages.the one that I have used for deer is brown valley market,the other i never have used but hear they do good work it's crow's meat,not sure what either would charge for pigs since i do my own pig's.plus i dont use brown's valley anymore due to one of my friends opened up a store and when they bought the owner ship they bought the rights to the awsome italian sausage that is from the dimaggio family.

I once took my kids when they were bery small to a trout farm to catch a few fish. At the time my wife was carring my LAST child and paged me. So I had to find a pay phone. When I got back the boys had caught over 30 trout. Yea almost $180 bucks in fish.

It's expensive down here too. I FEEL YOUR PAIN! Not too many choices in San Diego. But, my guy is awesome, just expensive. Last year my hog weighed 67 at the Sausage Meister. Two smoked hams, smoked chops, and the rest into smoked sausage. $170!!! Ouch! I was pissed.

So, he went and got a couple beers and we sat down and discussed my concern. A few more beers and a few smoked pork chops off the shelf, and a few more beers, and I was happy with the transaction.

I think he's from Switzerland. He makes about 100 different types of sausage. This time, I ordered Brats, Hot Cajun, Jalapeno and Chedder, Apple, Country, and Kilbassa.

I was not going to use him this year. I have all the tools. But, I gotta work, and then I gotta take care of the kids. My wife sticks it to me after a hunt.

Green Acres in Simi Valley charges $1.80/ lb for sausage. I couldn't be happier with the quality and service I got from them.

It's been a while since I've had a hog processed. We used Brees' Quality Meats (714) 892-1115 in Garden Grove. Seems like it was $60 - $80 and they made bulk sausage out of all the scraps.
