My Aunt and Uncle used to cook a pig in the ground every year on Labor Day weekend. They would dig about a 6 foot pit, go down to the local saw mill and get a load of wood, have a nice bon fire and then when it was down to coals they would put the pig in. The pig had been seasoned, wrapped in foil, wrapped in chicken wire and then placed in a barrel that had been cut in half. The pig was placed in the ground the night before the bbq. Once the pig is in the pit, the pit is filled in with dirt. Then the next day the shovels are brought out and the digging begins. Some of the best pork I have ever ate.
