Thought you guys might enjoy some pics from the yearly "matanza" my family, and almost all other families from our pueblo in spain (San Francisco de Olivenza), puts on. Its a yearly tradition to prepare the meat (cured hams, sausages, etc...) for the rest of the year.

here are two of the big boys from last year. the dark colored one is "Iberico" for any of you fine ham and chorizo connoisserus out there. click thumbnails for larger versions.

















these guys are the masters of butchering hogs. they just work their way down from belly to back with serious precision.

As my grandpa and dad would say, "looks like you're cutting a fat hog". That's hillbilly for "It was a good year".
