He was fulla nads and hanging out at the bottom of the canyon under a big ole tree...not much of a search. Here is his AFTER picture. Man those guys work fast! This is a huge 4' ice chest.

Have only tried the hot Italian so far but it is by far the finest I or my wife (complete skeptic) have ever tasted. Not nearly as greasy/gristly as store bought...perhaps they grind it finer or it has less fat. Much more flavor! I am very happy with the results. Can't wait to try the others.

Bruce: I just saw this come over the "wires". My wife, being part Maori, can sample your sausage if you'd like and tell you if it has any long pig in it!

SAN MARCOS, Calif.—Authorities were investigating the death Wednesday of a 72-year-old worker who fell into a meat-grinding machine at a sausage processing plant.
The accident occurred at B&H Prime Meat Company in San Marcos County.
"Despite all safety precautions there was an unforeseen tragic accident at our plant,"Ima Labinnac, general manager of the plant, said in a prepared statement. "The circumstances are being fully investigated."
The company said they had not had any complaints about the sausages but had no further comment.
The man, or what was left of him, was pronounced dead at the scene. His identity was being withheld pending the notification of his family.
The plant has been investigated for two previous accidents, said Iban Groundup, a spokeswoman for California's workplace safety agency.
In a mishap in December, a worker caught her hand in the grinder and suffered a partial amputation, Grounup said. That accident is still under investigation.
In an accident in November 2004, a worker who was cleaning a meat grinder activated it and was able to switch off the machine before getting sucked in.
The State Department of Health is trying to track down all the hot Italian sausage made by B&H Prime Meat Company and have notified customers to look out for a gold wedding band as well as bits of a Timex watch and pieces of plastic credit cards that may have found their way into the recently distributed sausage from the company.**

** Of course, my posting about the B&H Prime Meat is NOT true but given our not so bright population and litiginous society, I thought I'd make that clear before ther real T&H Prime Meat Company in San Marcos sues me as some silly bugger took it for "real". I did adapt it from a real story of a man falling in a meat grinder but it was not T&H Prime Meats, it was not in San Marcos and all the color, "no complaints about the sausage", "looking for the gold wedding band" etc was added by me. Labinnac is Cannibal spelled backwards. It was just that kind of joke by a couple of the Richie Boys in WWII that some not very bright person up the chain of command took for true that led to the myth of Hitler's one testicle. But that is another story.....

Bruce - have a great memorial weekend and enjoy the hog sausage.

Thats gonna be one tasty hog. Congrat's. The first pig I ever shot was from BHCR and it sure ATE GOOD!!!

Tried the chorizo, it doesn't fall apart like normal chorizo and holds it's shape but does still shed a lot of oil. Tastes like...well chorizo. Other than the meatier texture, no difference than store bought.

Good! The rumor around town was that they were old school euro butchers. Sounds like it they did you right and I'm glad to hear it. Based on your recommendation, I'll probably take my elk there this year.

Very nice!

Fenced in or not, I'd be happy with that for my first pig. Just curious, are you talking about San Marcos down near Escondido, when talking about the butcher? I live there, so I might need a butcher if I ever kill a damn thing...... :mad-red:

you can go to any livestock auction and buy these white or hampshire boars for around $50 and they can get huge- 600 or 700 lbs. thats what bighorn ranch does.

It seems like choosing the right butcher is as important as anything - sounds like you found a good one Bruce. My pigs sausage was way to fatty for my taste.

Anyone who lives in So. CA. should try Leon's Custom Meat Cutting in Riverside (Glen Avon area). They do an EXCELLENT job on wild pigs at a good price. I butcher my deer, but they do such a great job on hogs I just have to have them do it.
