OOPS make that Surprise.

Just finished eating some of the pork chops off of my Tejon hog.. Cooked up on the que and they were excellent... It took a little convincing the family to try them after the last teJon hog that was damn near unedible. I was really thinking that I would not hunt them anymore If we couldn't eat em. Looks like I can hunt some more.

Russ, for what it's worth...most of them are extremely toothsome. Every once in a while, you get a nasty one. My spotted pig from Tejon a couple years back was pretty rank on the taste-meter, but all the others have been delicious...including the one from this year.

It's some of the best game meat you'll ever bring home (although I have to admit that Axis deer give it a run for the money), and it's palatable to most folks who don't even like wild game.

Don't stop now, you're hitting your stride!

my last 3 pigs were all sows and all under 200 lbs and were outstanding eating, can't eat tusks so I guess its sows only for me from now on.

I have had nothing but good luck when it comes to wild pork. Be it sow or boar, 16lbs to 172lbs (field dressed), all have been awesome. We'll see how my Vandenberg AFB 288lb'er fairs in a while. I like to freeze the meat for a period of time before cooking it.

In regards to cooking, I use a meat thermometer, and once the internal temp gets to 170 - 175, I consider it done. Of course, this requires frequent turning and close monitoring so it doesn't burn on any side.

The last two boars have been great, but every so often we'll get a rank tusker. I'll feed most to the dogs.

As in venison, wont the pork take the taste of what it [the hog] eats? Wont a Tejon hog be gamier than say a central grass fed hog?

I've been lucky, just about every boar I've shot has dressed out at 150lbs.+ and they've all been tasty but the 130lb boar my son shot last month is by far the tastiest pork I've ever had.

LKN, Tejon hogs are essentially grass fed hogs. When they're not eating the seed heads off the wild oats they're rooting for acorns, etc. Plenty of good feed up there. Unless by grass fed you mean barley.

Hey, I'm claiming squatters rights or sumpin like that Russ. I helped drag that hog all of,,,, um,,,,,,,,, ah,,,,,,,,50 yards.
<

Do I get a taste? What's 50 yards of dragging worth, a chop at least right?
<

Glad it tastes better than the last one.
