I mostly cut it into steaks and into chunks for chili and stew.  I don't have a sausage grinder yet, but, look forward to getting one in the future. I am going to try to smoke some. I have a feeling it will turn out more like jerky though.

Just by chance, did you guys hunt down near Arrivaca?  I have hunted that section of public land, in 1990 & 1991 with success.  After that, the javelina were very scarce.  A lion hunting quide told us that a distemper type disease had really cleaned them out.  We like that area and haven't been back since 1993 when we got skunked.
Nice job, tough to get some action for three guys anywhere.
