I was doing a little research trying to find some great recipes or marinades for all the future pigs I'm ganna nail, and came across this thing.

Has anyone out there used this thing, and if so, how has it worked.

What other similar devices/set ups do you guys use who cook whole or halfed pigs and/or what would you reccommend using.

I have seen a Bar B Q design using cinder blocks and two chain length fence gates on the web to cook whole pigs cuban style. Try "googling" "Cuban Christmas Pig" and you'll probably get a few diffrent designs. I am sure it will save you a few bucks.

My pig cooker was made one winter long ago in AK when time was slow--took some discarded things and 3 cases of beer. has worked well for over 30 yrs in AK and now in Wisc.

I've used that pig cooker it works like a dutch/steam oven. It's portable wich is fun and it can take a few times to get the hang of it of. (cooking time in relation to how much fire.) You can't open the lid otherwise you lose at least an hour of cooking time. Another draw back is the clean up......don't let it sit with any animal parts or even liquid from the cooking. We let it sit one time overnight almost had to git rid of it but we desided to clean it up and play some jokes on the next cook next time.

I think you will be happy it will last for many years, and your not stuck to your back yard.

Now go get a pig and invite us all over for a beer and some pulled pork!!

I use a smoker that I made out of a 55 gallon drum. All boars are either sausaged/smoked, sows will go in the cooker for big parties if I have room in the freezer for a hole pig.

A Steam cooker- for a PIG how do you get the skin ceisp?? clean up tough- sounds like too many zeros fo me.

This is the ONLY way the Cuban boys down in Florida cook their hogs. It yields some of the best tasting pork you're ever going to try. Most I've seen were homemade contraptions, but this looks like it'll fit the bill. Get some mojo (pronounced moh-hoe) marinade, a case of Red Stripe, a bottle of the best rum you can find, and you've got yourself a party. Finish off with a fine cigar!

I ain't Cuban and been cooking pigs for a few years just like folks from Texas to NC and maybe Cubans be final authority but i don't care.
