It's a good show but not quite what I would call a pro. Not quite the right knife to use. Watch XDHunter do one and you will know what I mean.

i saw a rancher do much better. same CASE knife. took him less than 30 seconds.

he went up the rib cage and split the pelvic bone with that tiny knife. then the guts come out easy..he lifts them out, not yanks them. only the tips of his fingers get bloody.

he promised to let me film the next one...but none of us loser could get another pig down. i need to get back out there..if anything to film him.

on a side note. we deboned our hogs. i was about to toss a bone carcass into the junk pile when he suggested we smoke the ribs. he walked over to us, unfolding that tiny case knife. he was mumbling about how we left too much meat on the bones. well, the pig was small about a 50 lb pig. my brother held up the bone carcass and that man stuck the case knife into the bones next to the spin..zip zip zip..with the crunchy sounds..he cut off the ribs!! no bone saw, with my brother holding the bones out at arms length!! that case knife was like a light saber.!!

i cornered the rancher...he said all bone joints have tiny separations that get grown over as the animal developes in the womb. he takes advantage of them...he said you can feel the seam in the pelvic bone..animal on its back, knife inserted into the pelvic "hole" form the inside of the body cavity, knife blade towards the butthole..he said feel for it, get the edge in there and lift..

i have tried..i cant do it. i know know if he is freakishly strong or what. i checked his knife..it was actually on the dull side.

You should see the video of JuanTG gutting his. I wouldn't embarrass the guy by posting it. I guess when you shoot multiple hogs a year it seems a lot easier, but when you only open up one or two big animals a year it doesn't came as natural

So he uses a knife that seems more dull than a butter knife. I saw urine spilled in the cavity. Ok then...

Nothing against the guy. But, that was a pretty sloppy gutting job...Just my 2 cents...

You're not too bad at it yourself. Watching the two of you skillfully hack up a hog (not just gut it) made me want to get out the safety tape and rope off the area. The knives were moving so fast that I thought for sure that someone was going to lose a finger.

This is my favorite video of how to dress out a hog. I like how he cuts only skin deep at first and then goes back and cuts the guts loose around the hams. My biggest problem when gutting critters is the bladder. In the first video the guy just grabs it and cuts it off, but you can see some urine spraying out while he removes it. Perhaps not a big deal but I'd prefer to get it all out at once.

that kid's knife is sharp!! looks like he uses a kitchen butcher knife..probably from Forshsner. or something.

if he had gone thru the pelvic bone, then the guts could have lifted out...but i like it!! (i dont know how to crack the pelvis)

I find watching different styles makes my style better each time. There is no right or wrong unless you spoil the meat. Spraying urine, bile or crap is never good in my book. But like it says above the ones who cut all season long every year are always better than those of us eating tag stew several years in between harvests. I watched one field dressing where the meat had so much hair on it youd think the hide was still attached. Another kept sticking his knives in the dirt where the bile and urine spilled. When that meat is cooked I eat salads but most the time even the slow cutters or the over cautious cutters that keep the meat fresh and clean it all tastes good.

I have never opened a pig but I think some of the best videos are the Texan Teens. Those kids are fast clean and precise. Luv watching the young getting into the entire hunt all the way to the gorry end.

That kid doing the gutting in the video is our JHO member "NicBarca". He hunts in Hawaii with a .20 gauge shotgun. It's a good video although I would rather not cut that much skin and the nuts out. Keep them to protect dirts from the meat. If you have to drag that hog to get to the truck, the exposed meat will get dirty.
