Pig processing in Southern California?

Hello everyone,
I will soon be going on my first pig hunt - at the Tejon Ranch Pig-O-Rama. If I am lucky enough to harvest a pig, could anyone recommend a place to turn it into hams, sausage, bacon and whatever? I have butchered my own deer and elk but I would like to have a professional cure my pig. I read a couple of earlier recommendations (Harmony Farms in Glendale and Eschabachs in Gardena) but I haven't been able to locate them via anywho.com. I would appreciate any help / guidance you could give me. I live in Joshua Tree (which is north of Palm Springs) and my hunting buddy lives in Lake Forest, so if you could suggest anyplace on the "south side of the mountain" we'd be very grateful. I "jumped the gun" in my request - I just went to JHP's Special Topics forum where he list a bunch of meat processors - if I'm lucky enough to get a pig, I'll let you know who I used and the quality of their service! 4kie

Brees' meat's in garden grove at 11877 valley view 714 892-1115 they are quick ,clean and reasonable a deer cost me $65 and my bear cost me $90. do yourself an favor have it double wrapped it will last longer and not freezer burn. so cal hunter

Brees Meats is definetly the place in O.C.! I took a 240 pound pig in there Monday morning and it was finished that night! Great place, great price!

Brees mEats does a good job, although my wife had them make the breakfast sausage "Mild" so our 4-year old would eat it. He doesn't like it, and neither do I. It just tastes wierd. The rest of the pig tastes great - no gaminess at all and a friend gave us some spicy Cajun sausage Brees made for him, and it was great. So go for the spicer sausage....
