sausage recipe

Looking for a goog breakfast sausage recipe for about 40-50lbs of trophy hog

(aka to old to eat plain). I've tried every way I can think to cook it tastes like

! Mixed it today with store bought and it was very ediable but, I would like to make my own. HAVE GRINDER just need to know how and what to mix in.
