I need a recipe for sausage. I am looking for breakfast and Italian style.

Can you help?

Oh Yeah..I have ground hog....I mean wild pig.

I make sausage, but I buy the seasonings from my local butcher and adjust them from there. I would love to find a breakfast sausage recipe that mimics good old farmer john, but no luck. There are any number of websites that describe how to make sausage from common seasonings. Very informative.

I am from the south originally. The best sausage in the world hails from Smithfield, VA. I would google recipes that mimick the Smithfield sausage recipe. From what I remember, the main ingredient is sage. If you want PM me and I can contact my dad who still lives in Smithfield and maybe he can give a good recipe. Good Luck.
