It's not a marinade and I haven't used it on boar, but the Dean & Deluca Rib Rub is the best rub i've used bar none. I taste the rub out of the can all the time. It's good good good. Think you can order online but I don't know the price as it was a gift. I need more so I may attach a link later.
I smoke and slow cook my pork, usually a piglet. I baste the meat on the smoker (oak) with sesame and olive oil 50/50 and salt, pepper and garlic mixed in. I baste it every time I turn it (about every 1/2 hour) and when it's looking like a Hershey bar it comes inside and goes in a covered roaster for 3 or 4 hours at 250 F. When it's falling apart it's ready.
I use chicken broth and green chilis in the crockpot, cook overnight, and get the best pulled pork this side of Texas. For grilling, I boil my ribs in the same concoction, then get them ribs nice and crisp on a mesquite charcoal fire. Mmmmmmm...... Then I parboil the chops in the same stock, third round for the stock, and grill them. This is what I call my BBQ triple play!
I use a similar twin oil recipe like myfriendis, and I slather it and turn the meat continuously. The only thing I add is a little hot pepper for kick. The oil makes it crispy on the outside and seals in the moisture and the dry rub flavors the meat.
