I had some of my antelope steaks tonight, dang good. My kids loved it even asked for more. Now my wife liked it which says that it's a good eating meat.

I found it less "gamey" than deer i've had in the past.


Anything is good as jerky, don't think that's a fair comparison.

My sons and I have taken probably 15 goats (bucks and does) over the years from Montana, Wyoming and one from CA. We've also taken deer, elk, cariboo, wild pig and bear. The entire family (Moms, Dads and kids) think antelope is the best eating by far! Never once did one smell bad or taste gamey -- and some were from sage flats. We do treat them right (quickly skinned, etc.) but we do that with all our game.

Shot my first Lope in Nevada this year. From the time he was down until he was in the cooler was maybe an hour. STINK? I really didn't think that an animal that stunk that bad would ever taste good.
I kept the meat on ice for 3 days at home and before I cut it up I made a quick taste test. Kinda smelly while cooking but taste was compareable to lamb.
Cut him up and froze the meat.

Fast forward to November. Wife and I made 30 pounds of snack sticks, 5 pounds of salami and today I finished off the burger by making meatballs for Christmas and New Year snacks. Everyone who has tasted our creations has been left wanting more. I can't believe how mild and tasty the meat is and no more smell while cooking. I don't know if the time in the freezer took it away but am glad that we can enjoy the meat without air freshener after.

I have to wait 5 years before I can hunt Nevada again but am planning on putting in for California Lope this year. I think they taste better that deer.

Left for the coyotes are you serious? Ever hear of the wantinwaste law? Lope is excellent eating. Trick is to get the skin off asap.

skin it...1/4 it and put in a large cooler and ice it good.....remove all fat,tendons ya can...then gring with bacon...if a buck about a pound of bacon to every 5 lbs of lean meat...if a doe 1 lb to every 6-7 lbs of lean meat...I grind becon with all venison, elk, caribou, antelope or any wild game....everyone who has it swears they are eating beef....no matter the wild game it is....If ya need a lot of bacon ya can get the Wright bacon ends and pieces at wallmart for around $4.50 for 3 lbs
