Just had my first steaks off of my Antelope. YUM YUM. Marinaded in Jack Daniels marinade, kind of a teriaki mesquite taste. Really good . Next time will try without marinade. I was kind of scared at first because he was a really old buck,but no need to worry

I prefer antelope over elk. Nothing better than an antelope backstrap over a BBQ!

Try a dry rub and indirect heat on a BBQ. Its killer! :beer toast:

With all my wild meats I thin cut them on a deli slicer, carne asada style. Only about 1 minute each side on the grill. No need for anything except for salt & pepper.

I have a killer recipe for venison: thin slice the steak,squirt a bit of yellow mustard on it,put a slice of red onion and dill pickle on the meat and roll up securing with a toothpick. Then brown these in garlic and butter. After browning cover with1/2 bottle apple juice and simmer down. Then place remaining apple juice over and simmer down again. This is one killer recipe I got from a guy in Battle Mountain Nevada over 20 years ago

Try cooking some steaks rare or medium rare using a steak Diane recipe and serve the platter flaming.

i just got back from wy with all the meat and threw it all in the freezer... was too tired. i know it needs more cleaning and trimming.. its been a week now... it will probably taste gamy now too, with alittle hair on it too.... anyone have some tips? i heard rubbing vinegar on it will kill all the bad taste...i will start tommorrow....

It shouldn't have "bad" taste. If it does it probably isn't good. How did you keep it cool for a week? Dry ice,etc ?

Nothing worse than a gamey buck......Saltwater soak works great.........I only shoot does anymore,must better eating.........
