I generally do a breakfast shake of some kind and coffee. After I finish cleaning my hog I'll have a shake for lunch too. Dinner is when I'll be packing in the food. I can also bring margerita stuff. I use Puerto Vallarta tequila, grand marnier and sauza mix. Makes an awesome margie.

I'll second that pigig !

OK folks I have the elk ribs ready to go but I have only cooked ribs once in my life. I know, its sad, they were just never my thing. So, I need a little advice on what to do with them.

Should I marinate them overnight and we can throw them in the oven Saturday afternoon before heading out for the final 3-4 hours? How about boiling them like my brother in law does for 3 hours and then finishing them in the oven. Or maybe just the grill.

Any good ideas from the chefs in the group......

Here is how I do most all of my ribs-

I make a semi-thick marinade with a rub (Pappys usually), garlic, Lemon Pepper, Kosher salt, Black Pepper, Tapatio hot sauce, Soy Sauce, and a skosh of worshister and red wine viniger. The viniger breaks down the fat.

Coat the ribs- wrap in foil- bake 350 for 45-65 min turning once.

Let cool- in the foil, the meat will resoak the rub and juices.

Fire up the BBQ and glaze with a sauce- (I usually use Waterloo, but you have to go to Waterloo's to get it. Unless you live in Stockton- some stores carry it
<
about a hour 15 min drive each way to Waterloo for me.

The Waterloo

They Absolutely make the best ribs/sauce/pesto linguini and clams you can get your mouth on. (

Oops - I think my reply went to report instead - I apologize if I did that!

This may go on for another 6 pages now, since almost everyone has their favorite way to cook ribs!

I rub mine with garlic, black pepper and seasoned salt. I put a cup of water with about a tablespoon of Liquid Smoke in a turkey roaster with a tight fitting lid, add the rack of ribs, put the cover on and place in a 250 - 300 degree oven for about 4 hours. Something about that low, moist heat tenderizes the ribs perfectly, especially game ribs. Then I finish them off with just a few minutes on each side covered with sauce on the grill. Careful, though - you may need a spatula to turn them over since they might fall apart!

I did some work last night (sharpened 5 knives) but got side tracked by my wife and her friend who reminded me that I NEEDED to drink some Guinness.

I'll finish the packing tonight and be on the road early. Does anyone know of an Archery store on the way down from SF? My two local archery stores kinda messed me up on broadheads, one shipment hasn't come in and the other had the wrong ones even though they told me they had the right ones. If the shipment comes in today for Pacifica Archery I will stop there on the way. I have enough for the hunt, just means a little more work sharpening some of the heads I have designated as practice heads.

I am going to be useless at work today

Steve,

Predators Archery in Gilroy.

7350 Monterey St.
Gilroy, CA 95020

Give them a call and see if they got what you need. They don't open until 12:00 noon, but they are there early and will take care of you before opening time. Just let them know what time you will be stopping by.

Hey guys,

I'm leaving the Bay Area later tomorrow (probably not 'til after lunch) so if you need anything drop me a line. BDB, Jesse, and Bighorn all have my cell phone number. If anyone else needs it, send me an email.

Hopefully, I'll be able to find the place since ya'll will probably already be stalking that first big herd.

Leave one for me!

Thanks for the reminder, Fritz. I was just making my loading list for the trip. Need to check the kitchen box and make sure it's in there.

That other thing... kinda what it sounded like. I hope you're right.

Oh, and there will be cameras! Never fear! Can't guarantee pictures, but I have three cameras in the truck right now, and I know of at least a couple more on the way!

C'mon... ain't it Friday afternoon yet?

Man, I have WAY too much gear and food packed

Oh well, could be much worse. Weather looks OK, highs of 75, 79, 75. Kinda warm but lows of 45 are OK too.

See ya'll there.
