Page 25 "Care of meat" speaks to cuts from younger hogs and sausage from older hogs. Also some interesting looking recipes follow on the next page.

There is no way I would just grind up an entire hog for just sausage! I've killed quite a few of them and you don't know what you're missing - hams, roasts, pork chops, pulled pork.......the chops alone are like candy when they come off the grill.

I have plenty of hunting knifes Ive collected over the years. Havalon do have there place in processing game animals, but Outdoor Edge has been the best knife I have ever purchased for the task. Its the only knife I take with me anymore. Their gut hook has been the most effortless method of opening up hide that I have personally ever experienced. I am not a fan of replaceable blades especially with slippery hands but Outdoor eEge has two different models for those who do and dont.

I haven't had a bad eating wild hog myself. they have all ate really well.

I will have to give these Havalons a try before buying any thing else. But the EKA could be a present for my Grandson's hunting pack ?
Next year will be his first Deer hunt !

We should have time this weekend, a couple things to take care of first. going to be good, get to shake out my hunting trailer haven't use it in a couple years, all hunting has been Pack in and out tough hunts but well worth the efforts.
