Peppers or pepper sauce to go with the meat on the plate.

Fire roasted peppers or a sauce of chili peppers for the meat. I would use a bigger dish to coat the mea with. Best guess. Ancho Chilis

bullet in the plate is throwing me off right now but it dont look too bad! i dont think its mama's homemade chilli carnita sauce is it? or is it something u would have to eat on fear factor? HHHHhHMMMMMMMMMMM................tra

Looks like pickled pork skin with a side of chili dipping sauce. The bullet is a hint for us.

easy.......wild hog gristle plate/hide (fried in rendered wild hog oil), chili sauce and the recovered barnes tsx as a garnish. My favorite too...just takes too long to prepare the hide.

What do I win?

Yes, boiled wild pig thick hide with fat next to chilli sauce...probably the pig from your other post..

Boiled pig hide with chili sauce. My parents love it, as do I :). I get sick if I eat too much of it though.

You might consider making a Filipino barbecue called Lechon, which is a very crispy pig, with lots of crackling skin that is very tasty. They also like chicharron, which I enjoy dipped in salsa and sour cream. To my non-imbibing friends, I just mention that these pigs didn't make the football team.

I know, I know. It's pork hide/skin and chili sauce with fish sauce. LOL. That's a popular dish among Asians.

Lechon is delicious! I had some a few days ago from some hole in the wall filipino restaurant when I was down at Santa Clarita, Ca.

Oh the fish sauce, how could I forget :lol bashing sign:
