I took a nice 14 inch buck this year, and wasn't expecting the absolutely delicious steaks I carved out of it. Best game meat I have ever had... even better than the elk calf I shot last year...

I shot him while feeding in the early morning, clean shot through the lungs and heart. He ran 25 feet and fell in a heap. He was in big open sage desert, at least 30 miles from any irrigated fields. I hung him for 2 weeks in the meat locker. I ground most of the front quarter and flank, making suasage, then steaked out the top and bottom round, backstraps, tenderloin and top-sirloin.

It all went into the freezer and I didn't eat on it until December - 3 months after I shot it.

When I finally pulled a pack of round steak out one night, I did what I do with most of my game steaks - barbeque it (medium rare). Better than quality beef steaks IMO.

My wife and I ate it and nothing else that night... a side dish would have just ruined the expereince. The following night we cooked some of the backstraps, which were 1 inch think medallion steaks...

We cut them with our forks - no exaggeration. She is a total fiend for the stuff now... and is thinking even she might be able to shoot one (and she's a bambi-lover).
